For the past few months the weather's been soupy
but the season is on the cusp of change.
Huzzah we are approaching
those glorious salad days.
Rosemary, thyme, roast potato
Parsley, parsnip, you've all been just fine
But now I'm craving a vegetable crunch
to placate this palate of mine.
Cucumber, tomato, lettuce
Carrots, capsicums and the like
Olives, feta and artichoke
No cause for an insulin spike
Pears, pecans and parmesan
Quinoa, carrots and chickpeas
Baby Spinach, bocconcini
Watercress? Hells yes, please.
Sweet potato and macadamia
Bean sprouts, peanuts and tofu.
Chinese cabbage, crunchy noodles
and a saucy vinigarette or two.
Carrot, cabbage and pineapple
Pumpkin, almond and ricotta
These are the combos I want to try
as the weather slowly gets hotter.
